History
The Department of Postharvest Science and Technology was established in 1996 on the Faculty of Food Science. In the MSc education of the Faculty, the Postharvest specialization offers courses for the students in the following main areas:
- Principles of horticultural production, main characteristics of horticultural products
- Food products – characteristics and standards
- Physical, chemical and physiological changes before harvest and during storage
- Transportation
- Trading
- Logistics
- Rules of EU concerning postharvest measurements
- Quality assurance systems in agri-food industry
Research activities involve the following fields:
- Quality indices of horticultural products during storage period
- Application the gas-chromatography at postharvest field
- Determination the low oxygen limit of the fruits and vegetables
- Development of the controlled athmosphere storage and ULO system
- New tools to improve shelf-life stability of fruit and vegetable products
- Quality and environment consciousness: postharvest characteristics of disease-resistant apple cultivars
- Postharvest information collection via IT networks
Sensory Laboratory
The Department has a Sensory Laboratory, which is the largest in the academic sector of Hungary.
The Laboratory is designed according to the relevant ISO standards. Each of the eight testing booth has standard lighting sources, water inlet and a specially designed computer system. The assessors take the data directly to the computers via an own-developed software. The PCs are structured in a LAN in order to collect and analyse data near real-time. The Laboratory covers the following fields in education, research and consulting:
- Sensory analysis – principles and development
- Physiological and psychological background
- Testing methods – typical application areas
- Experimental design
- Basic and advanced matematical-statistical analysis of sensory data
- Role of sensory testing in quality assurance systems
- National and ISO standards of sensory analysis
