An Alumnus’s Recipe for Starting a Brewery

For now, it’s still a love project, but his medium-term goal is to make a living entirely from brewing. Gergely Lugosi, Corvinus University alumnus and founder of TOBOZ Beer, shared with us the joys and challenges of launching a newly established craft beer venture.

Visitors to the October farmersmarket in front of Building C may already have seen the TOBOZ Beer stand. Behind it stood Gergely himself, who currently runs the entire operation single-handedlyfrom brewing to sales:

If I had known back then how much meticulous work brewing involves, I might never have started. But it’s my love project — something I’ve wanted to do for a very long time,” he says with a laugh.

At his brewery in Érd, he currently produces two or three varieties of beer, primarily local brews meant to be enjoyed fresh. When developing recipes, he focuses on achieving an easy-to-drink yet distinctive flavor profile.

Gergely graduated from Corvinus University in 2017 with a Bachelor’s degree in Economic and Rural Development Engineering, and even during his university years, he was already drawn toward entrepreneurship:

We had a course on entrepreneurship with several guest speakers, and I think that’s when I realized this lifestyle was what I truly wanted,” he explains.

The challenging road toward a successful and sustainable business is well illustrated by the fact that although the idea for the brewery was born in 2022, it only materialized three years later, in the spring of this year:

It took me this long to become creditworthy enough to invest in the brewery instead of taking out a mortgage. It’s a business that requires a lot of equipment and space,” Gergely notes.

He still manages TOBOZ Beer alongside his full-time job but receives plenty of support from friends and family. His medium-term goal is for brewing to become his main source of incomeideally allowing him to hire a few employees as well.

When asked whether there’s still room for a new brand on Hungary’s crowded craft beer market, he smiles:

It was definitely a bold idea, yes. But I brew beers with a simple, easy-to-understand flavor, and fortunately, it’s hard to go wrong with those. Also, instead of focusing on wholesale, I’m currently targeting local and regional consumers.”

At the moment, TOBOZ Beer can be purchased directly from the brewery in small kegs, and Gergely also supplies one pub in Érd and another in Velence. Looking ahead, he hopes to grow his business organically, with the next major step being the launch of smaller canned beer batches.

My ultimate goal — and of course, my biggest dream — is to open my own pub someday, where I can pour my beer myself and sit down to chat with my guests,” he adds with a smile.
